Apricot and almond tart

Apricot tart with almonds

For 6 people

Dough :

  • 125 g of butter
  • 250 g of flour
  • 1 pinch of salt

Filling :

  • 700 g of apricots
  • 50 g of powered almonds
  • 2 eggs
  • 125 g of fresh cream
  • 40 g of sugar
  • 1 sachet of vanilla-flavoured sugar

Place the flour and salt in a bowl.
Add the butter cut in small pieces. Rub in the butter with the tips of the fingers (the flour must resemble fine bread crumbs).
Add a drop of water, form a ball and leave to rest for an hour in a cool place.

Wash, dry and remove the stones from the apricots.
Spread the pastry and place it in a tart mould.
Prick the pastry with a fork and cook it empty for a few minutes in a hot oven. Remove the pastry from the oven.
Place the apricot halves on the bottom of the tart.
Place the fresh cream, eggs, almond powder, sugar and vanilla-flavoured sugar in a bow and mix well together.
