This elder has rather coarse foliage which is coloured mid-green. The leaves have a toothy appearance. It comes into its own when it is covered with flat heads of fragrant cream flowers in June which are followed by bunches of black fruits. The fruits can be used to make elderberry wine. You can also fry the flowers as fritters and use them to flavour gooseberry fools. It is a simple humble plant that is suited to modest cottage gardens where it looks comfortably at home. The name elder comes from the Saxon word for kindler, because you could make a hollow tube out of the stems by removing the pith and blow down it to encourage afire. These were also used as pea shooters. Elder wood was once used to make harps. It has had ambivalent associations in folklore. It used to be said, in some communities, it was unlucky to bring elder blossom into the house, because you would bring in the devil at the same time. In other areas the tree was planted close to the house in order to protect it against witchcraft.
